Low Fat Spicy Hash Browns

I have a favorite recipe that I usually serve with breakfast for hash browns with less fat and a little bit of spice

Low Fat Spicy Hash Browns

2 large baking potatoes
2 tbls Smart Balance Spread
1/4 teas. Freshly ground black pepper
1/4 teas salt
1/4 teas., or to taste cayenne pepper powder
1/2 teas paprika

Microwave washed and dried potatoes in microwave for about 15 minutes on high, until tender to touch.  Allow to cool until they are comfortable to handle.  With hands remove skin.  Place peeled potatoes into medium bowl;  Meanwhile melt spread in a large non-stick frying pan over med-high heat.  With fork or potato masher roughly mash potatoes until the large lumps are gone.  With fork mix spices in.  Using spatula, turn potatoes into frying pan and fry until browned on one side, gently turn potatoes and continue browning on all sides until potatoes are well browned,not burnt, and heated through,  Serve along side, steak, pancakes, fish or other favorite dish
