Mexicali Egg Whites
This is a recipe based on one I saw on livewell television p use slices of avocado are whole wheat toast and no jalapeno with the egg whites just the green onion this is my version of his recipe.
Ingredients
Two egg whites
2 teaspoons milk. One tablespoon of extra virgin olive oil
One green onion cleaned and sliced
Half of medium green jalapeno. Diced Dash salt and pepper
About a quarter cup of pre-made guacamole
Two slices ripe tomato
A couple of leaves or so of baby spinach cleaned
about a quarter cup shredded cheddar cheese
then you can have either two slices of whole wheat bread toasted or an English muffin or a soft flour tortilla lightly grilled on the flame
Lightly beat the egg whites with the milk add olive oil to a nonstick pan and heat until shimmering Add the sliced green onion and the sliced jalapeno and saute until soft add egg and stir while cooking to desired doneness the cheese on top and allow to melt turn off heat.Toast the bread according to how you prefer spread with the avocado top with the egg mixture place the tomato on, top with spinach and then cover with bread or fold tortilla. Makes for a delicious breakfast thank you
